The easiest mocktail is 15 to 20ml of syrup, a squeeze of citrus and 150ml of soda water over ice. It takes two minutes and needs no shaker. As a rule, use 1 part syrup to 7 to 10 parts fizz.

The citrus is not optional. Syrups are sweet on their own, and a squeeze of lemon or lime gives the drink an edge so it tastes like a proper drink and not a cordial.
Build it in the glass
Add ice, then the syrup and citrus, then pour the soda over the top and give it one gentle stir. If you stir too hard you knock out the bubbles.
Making a jug of 10
Mix 200ml of syrup with 100ml of citrus juice and keep it chilled. Add 1.5 litres of soda water at the table. Mixing the soda in early is the only way to ruin it.
